Ingredients

2 cups Brown rice, uncooked

2 tablespoons Canola or peanut oil, divided

1 pound Boneless, skinless chicken breast, cut into 1-inch cubes

2 cloves Garlic cloves, minced

1 Red bell pepper, cut into chunks

1 Medium onion, cut into chunks

2 cups Broccoli florets and stems, chopped

2 cups Fresh pineapple chunks

1 Fresh lime

1 tablespoon Thai fish sauce

2 tablespoons Thai chili sauce

¼ cup Fresh cilantro, chopped

Directions

  1. Prepare the brown rice according to package directions. Set aside and keep warm.

  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering.

  3. Add the chicken cubes to the skillet and stir-fry for 4 to 5 minutes, stirring frequently, until the chicken is cooked through and no longer pink in the center (internal temperature 165°F). Transfer to a plate.

  4. Return the skillet to the heat and add the remaining 1 tablespoon of oil.

  5. Add the minced garlic and cook for about 1 minute until fragrant, stirring constantly to prevent burning.

  6. Add the bell pepper chunks, onion chunks, and broccoli to the skillet. Stir-fry for 5 minutes until the vegetables are tender-crisp.

  7. Add the pineapple chunks and cook for 3 to 4 minutes more, stirring gently to combine.

  8. Return the cooked chicken to the skillet. Squeeze the juice from half the lime into the mixture, then add the fish sauce and chili sauce. Toss in the fresh cilantro and stir everything together.

  9. Cook for 1 additional minute until all ingredients are heated through and flavors are well combined.

  10. Divide the brown rice among four serving bowls and top with the chicken and pineapple stir-fry. Serve with lime wedges on the side for extra brightness.
