Ingredients

6 oz soba noodles

2 tbsp sesame oil

2 large bell peppers, any color, cored, seeded, and thinly sliced

8 oz shiitake mushrooms, stems removed and thinly sliced

2 cup baby spinach

5 tbsp soy sauce or tamari

1 tbsp fresh ginger, grated

3 clove garlic cloves, minced

2 tbsp mirin

1 tbsp honey

1 tsp sambal oelek

1 tbsp cornstarch

salt

¼ tsp black pepper

Directions

  1. In a small bowl, combine the soy sauce, mirin, honey, sambal oelek, grated ginger, minced garlic, and 1/4 teaspoon of black pepper. Whisk until well combined.

  2. Add the cornstarch to the sauce mixture and whisk continuously until the cornstarch is fully dissolved with no lumps. Set the sauce aside.

  3. Bring a large pot of salted water to a rolling boil. Add the soba noodles and cook for 2 to 3 minutes, until they are just slightly undercooked—they will finish cooking when combined with the vegetables and sauce in the pan.

  4. Drain the cooked soba noodles in a colander and set aside.

  5. Heat the sesame oil in a large sauté pan or wok over medium-high heat until shimmering.

  6. Add the sliced bell peppers and mushrooms to the hot oil. Season with a pinch of salt and pepper, then stir-fry for about 5 minutes, stirring frequently, until the vegetables begin to soften and the mushrooms release their moisture.

  7. Add the drained soba noodles and a small splash of the prepared sauce to the pan. Using tongs or two spatulas, toss and mix the noodles with the vegetables for 1 to 2 minutes.

  8. Pour the remaining sauce over the noodles and vegetables. Continue stirring and tossing to coat everything evenly with the sauce. Cook for another 2 to 3 minutes, stirring occasionally, until the sauce thickens slightly and coats the noodles and vegetables.

  9. Add the fresh spinach to the pan and toss gently until wilted and combined with the other ingredients, about 1 minute.

  10. Divide the stir fry between serving plates and serve immediately.

Shiitake mushrooms will require a special stop at Harris Teeter's specialty produce or a second visit to ALDI, since Food Lion and Walmart's mushroom sections rarely stock them fresh; soba noodles are common enough at most Charlotte chains, but the ingredient pairing—sambal oelek, mirin, and sesame oil together—pushes this toward Asian markets if you want quality versions. The cost per serving lands around $3.50–$4.00 with premium mushrooms and good soy sauce, well within weeknight budget if you don't substitute. Actual prep and cooking time is closer to 20–25 minutes once vegetables are prepped, though the recipe likely lists 15. This is a same-night dish best eaten fresh and hot; reheats poorly because the noodles firm up and the vegetables lose their snap.
