A simple, naturally sweet pear sauce made in a pressure cooker. Fresh pears are cooked quickly under pressure with warm spices like cinnamon and nutmeg, then blended to your desired consistency. This wholesome sauce is perfect as a side dish, dessert topping, or snack.

Ingredients

10 large pears, cored and sliced with skin on

1 cup pear juice or apple juice

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

Directions

  1. Add the sliced pears to the pressure cooker, filling it no higher than the maximum fill line indicated by the manufacturer.

  2. Pour the pear or apple juice over the pears.

  3. Sprinkle the ground cinnamon and ground nutmeg evenly over the pears and juice. Stir gently to combine.

  4. Lock the pressure cooker lid securely in place according to your cooker's instructions.

  5. Place the pressure cooker on the stove over high heat. Allow the cooker to build pressure until it reaches high pressure (typically when steam begins to escape from the vent).

  6. As soon as the cooker reaches high pressure, remove it from the heat. Allow the pressure to release naturally by letting it sit undisturbed for 10–15 minutes until no steam escapes when you carefully test the release valve.

  7. Once pressure has been safely released, unlock and remove the lid. The pears will be very soft and broken down.

  8. Using an immersion blender, stand blender, food processor, or food mill, blend the cooked pears and their liquid until you reach your desired consistency—smooth for a fine sauce or slightly chunky for texture.

  9. Serve warm or let cool and refrigerate. Use as a sauce, topping, or side dish as desired.
