Ingredients

1¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 tablespoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon ground nutmeg

¼ teaspoon salt

2 large eggs

1 cup unsweetened applesauce

½ cup plain Greek yogurt

½ cup brown sugar

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

1 medium apple, peeled and grated

Directions

  1. Preheat your oven to 350°F and lightly grease a 9 x 5-inch loaf pan with butter or cooking spray.

  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt. Set the dry mixture aside.

  3. In a separate bowl, whisk the eggs until they are slightly frothy and light in color.

  4. Add the applesauce, brown sugar, Greek yogurt, melted coconut oil, and vanilla extract to the eggs. Stir until the wet ingredients are well combined.

  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. The batter will be thick and slightly lumpy—do not overmix.

  6. Gently fold the grated apple into the batter until evenly distributed.

  7. Pour the batter into the prepared loaf pan and smooth the top.

  8. Bake for 50–55 minutes, until the top is set and a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let the bread cool in the pan for 20 minutes.

  10. Turn the bread out onto a wire rack and allow it to cool completely before slicing.
