2 tablespoons honey

2 tablespoons olive oil

2 tablespoons balsamic vinegar

10 ounces orzo pasta

1/4 cup fresh parsley, chopped, plus more for garnish

Directions

  1. Gently rub the peaches with a damp paper towel to remove any fuzz, being careful not to soak them. Cut each peach in half lengthwise, following the natural crevice around the pit as a guide, and discard the pits.

  2. Place the peach halves in a large resealable plastic bag. Add the honey, olive oil, balsamic vinegar, and a pinch of sea salt. Seal and gently toss to coat evenly. Let marinate for 10 minutes.

  3. While the peaches marinate, bring a large pot of salted water to a boil. Add the orzo and cook until al dente according to package directions. Drain in a colander and set aside.

  4. Heat a grill or grill pan over medium-high heat and lightly oil the grates. Remove the peach halves from the marinade, reserving the liquid. Place the peaches cut-side down on the grill, cover, and grill for 5 to 8 minutes until softened and charred. Remove to a cutting board, allow to cool slightly, then cut into bite-sized pieces.
