Ingredients

4-5 medium potatoes, peeled and cubed

2 tablespoons sweet paprika

1 tablespoon coarse sea salt

1 tablespoon freshly ground black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons creole seasoning

1 teaspoon ground allspice

½ red bell pepper, cut into strips

½ yellow bell pepper, cut into strips

2 tablespoons light mayonnaise

2 tablespoons Greek yogurt

1 small bunch A small bunch of fresh basil, torn

Salt and water for boiling potatoes

Directions

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add the cubed potatoes and cook until they are fork-tender, approximately 15-20 minutes. Drain thoroughly and set aside.

  2. In a small bowl, combine the sweet paprika, sea salt, black pepper, garlic powder, onion powder, creole seasoning, and ground allspice. This is your Cajun spice blend.

  3. While the potatoes are still warm, transfer them to a large mixing bowl and sprinkle with the Cajun spice blend. Gently toss to coat all pieces evenly.

  4. Add the red and yellow pepper strips to the seasoned potatoes and toss gently to combine.

  5. In a small bowl, whisk together the light mayonnaise and Greek yogurt until smooth and well combined. Pour this dressing over the potato mixture.

  6. Add the torn fresh basil leaves to the salad and toss gently until all ingredients are evenly distributed.

  7. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
