Ingredients
1 1/2 pounds red potatoes
1 cup non-fat plain yogurt
1/3 cup minced onion
1/2 cup shredded reduced-fat cheddar cheese
4 tablespoons snipped fresh chives
3 tablespoons real bacon bits
1/4 teaspoon salt
freshly ground pepper to taste
chopped fresh parsley for garnish, optional
Directions
Place whole red potatoes (uncut and unpierced) into a microwave-safe dish.
Cover the dish with a microwave-safe lid or plastic wrap. If using plastic wrap, poke 2-3 small holes to allow steam to escape.
Microwave on high power for 10 to 12 minutes, depending on your microwave's strength. Potatoes are ready when tender and easily pierced with a fork.
Using oven mitts or a kitchen towel, carefully remove the hot dish from the microwave.
Gently lift the cover away from you to avoid steam burns and allow the potatoes to cool for 2 to 3 minutes.
Once cool enough to handle, cut the potatoes into bite-sized pieces and transfer them to a large mixing bowl.
Add the non-fat yogurt, minced onion, shredded cheddar cheese, fresh chives, bacon bits, salt, and ground pepper to the bowl with the potatoes.
Gently stir and fold all ingredients together until well combined and evenly coated.
Transfer to a serving dish and garnish with chopped fresh parsley if desired. Serve immediately or chill until ready to serve.
