Ingredients
8 tablespoons unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
1½ cups creamy peanut butter
3 large eggs
1 teaspoon pure vanilla extract
4 cups rolled oats
2 teaspoons baking soda
1 cup milk chocolate M&Ms
1 cup chocolate chips or chopped semisweet chocolate
Directions
Preheat your oven to 350°F. Line baking sheets with parchment paper to prevent sticking.
In a large mixing bowl or stand mixer, cream together the softened butter, granulated sugar, brown sugar, and peanut butter. Beat for 2-3 minutes until the mixture is light and fluffy.
Add the vanilla extract to the wet mixture and blend well. Crack in the 3 large eggs one at a time, beating after each addition until fully incorporated.
In a separate bowl, combine the rolled oats and baking soda. Gradually fold or mix this dry mixture into the wet ingredients until just combined.
Fold in the milk chocolate M&Ms and chocolate chips until evenly distributed throughout the dough.
Drop heaping tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading.
Bake for 10-12 minutes, until the edges are set but the centers still appear slightly soft. The cookies will continue to cook on the hot baking sheet.
Allow the cookies to rest on the baking sheet for 3 minutes, then transfer them to a wire rack to cool completely.
