2 tablespoons cocoa powder
2 tablespoons coconut oil, melted
¼ cup maple syrup
¾ cup oat flour
¼ cup natural peanut butter
pinch pinch of fine-grain sea salt
1 teaspoon vanilla extract
Directions
In a large mixing bowl, combine the cocoa powder, melted coconut oil, maple syrup, vanilla extract, and sea salt. Whisk together until the mixture is smooth and well blended.
Add the peanut butter to the bowl and stir until fully incorporated with the cocoa mixture.
Fold in the oat flour until completely combined, ensuring no dry pockets remain. The mixture should be thick and moldable.
Line a baking sheet with parchment paper. Using a rounded spoon or small cookie scoop, drop portions of the mixture onto the prepared baking sheet, spacing them about an inch apart.
Transfer the baking sheet to the freezer and chill for about 1 hour, until the cookies are completely firm to the touch.
Once frozen, transfer the cookies to an airtight container. Store in the refrigerator for up to 2 weeks or in the freezer for longer storage.
