Ingredients
1 cup apricot preserves
1 cup finely chopped dried apricots
2 tablespoons sugar
1 teaspoon pure lemon extract
Directions
In a medium saucepan, combine the apricot preserves, chopped dried apricots, and sugar over medium heat.
Stir the mixture frequently as it simmers for about 8–10 minutes, until the filling thickens and the apricots soften completely.
Remove from heat and stir in the pure lemon extract until evenly incorporated.
Transfer the filling to a bowl and let it cool to room temperature, about 15–20 minutes, before using in cookies.
The apricot filling is now ready to use as a filling for your kolaczki cookie dough.
Comments
Kolaczki are a Polish-Jewish pastry that demands lamination or at minimum a yeasted dough with multiple folds—45 minutes is the stated time only if you're using store-bought puff pastry or phyllo, which changes the recipe fundamentally and should have been explicit. The four ingredients listed are just the filling; the dough itself (flour, butter, eggs, yeast or cream cheese, salt) will run $4 to $6 for 36 cookies, making them roughly $0.15 to $0.20 per piece and genuinely budget-friendly. All ingredients are stocked at any Charlotte chain—no special trip. The real catch is honesty: this is a weekend project, not a weeknight one, and it requires attention to lamination folds or yeast rising. They reheat beautifully and freeze well, which is a major plus for a small household.
