Ingredients
4½ pounds skin-on salmon fillets
2 tablespoons olive oil
salt
½ cup honey
2 teaspoons harissa
Directions
Preheat your oven to 400°F. Pat the salmon fillets dry with paper towels to help the skin crispen during roasting.
Arrange the salmon fillets skin-side down on a parchment-lined baking sheet. Brush the top side of each fillet with olive oil and season with salt.
Place the baking sheet in the preheated oven and roast for 12–15 minutes until the salmon reaches an internal temperature of 145°F and the skin is golden and crispy.
While the salmon roasts, whisk together the honey and harissa in a small bowl until well combined.
Remove the salmon from the oven and carefully brush the harissa-honey glaze over the top of each fillet.
Return the baking sheet to the oven for 2–3 minutes to set the glaze. Serve immediately with the pan juices spooned over top.
Comments
Harissa is the catch: it's not standard at Harris Teeter, Food Lion, or ALDI, so you'll need to make a special trip to a Middle Eastern market or World Market to source it, which adds friction to a weeknight. The recipe itself is dead simple and honest about its 25 minutes, and salmon is reliably available at Charlotte chains, making the actual cooking straightforward. At fourteen servings from presumably four or five salmon fillets, the cost per serving stays low, probably $2.50–$3.50, driven by salmon price rather than any fancy ingredients. The real drawback is that glazed roasted salmon doesn't hold well as a leftover—it dries out on reheating—so this is a same-night dish, and you'll be cooking for a crowd or batch-prepping for multiple meals.
