Ingredients

1 tablespoon olive oil

1 pound boneless chicken breast, cut into 1-inch pieces

1 box cheesy nacho skillet pasta mix (with seasoning and cheese packets)

2 cups water

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced corn, drained

Shredded lettuce for serving

Diced tomatoes for serving

Diced avocado for serving

Directions

  1. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken pieces and cook, stirring occasionally, until the chicken is opaque throughout and reaches an internal temperature of 165°F, about 7-8 minutes.

  2. Add the 2 cups of water to the skillet with the cooked chicken. Pour in the pasta noodles and the seasoning packet from the box. Stir well to combine and bring the mixture to a boil.

  3. Once boiling, reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally, until most of the water has been absorbed and the pasta is tender.

  4. Remove the skillet from the heat. Add the rinsed and drained black beans and the drained corn to the pasta mixture. Stir in the contents of the cheese packet until the sauce is well combined and coats all the ingredients.

  5. Divide the nacho skillet mixture among serving bowls. Top each portion with shredded lettuce, diced tomatoes, and diced avocado. Drizzle with salsa if desired and serve immediately.
