Ingredients

½ medium Cucumber, spiralized or cut into ribbons

2 medium Carrots, spiralized or cut into ribbons

100 g Mixed salad leaves (radicchio, frisée, and round lettuce)

4 whole Spring onions, finely sliced

200 g Roasted chicken pieces

2 tsp Sesame seeds

2 tbsp Sesame oil

1½ tbsp Rice wine vinegar

1½ tbsp Low-sodium soy sauce

½ tbsp Fresh ginger, finely grated

1 tsp Golden caster sugar

Directions

  1. Spiralize or slice the cucumber into thin ribbons and place in a large bowl or divide among 4 containers for meal prep.

  2. Spiralize or slice the carrots into thin ribbons and add to the bowl or containers with the cucumber.

  3. Add the mixed salad leaves and finely sliced spring onions to the bowl or distribute evenly among the containers.

  4. Divide the roasted chicken pieces among the salad, either by tossing into the large bowl or distributing into the individual containers.

  5. In a jar with a tight-fitting lid, combine the sesame oil, rice wine vinegar, soy sauce, grated ginger, and sugar. Seal the jar and shake vigorously for about 30 seconds until well combined and the sugar dissolves.

  6. If serving immediately, pour the dressing over the salad in the large bowl and toss gently to coat all ingredients evenly. If meal prepping, divide the dressing among 4 small containers to pack separately.

  7. Sprinkle the sesame seeds over the salad just before serving or divide among the containers.

This salad hits the right notes for a Charlotte weeknight: spiralized vegetables and rotisserie chicken from any major chain keep prep honest at around 10–12 minutes once you account for spiralizing and dressing, not the stated 15. Cost per serving lands under $3 if you use store-bought rotisserie chicken and basic sesame oil, though quality sesame oil and fresh ginger will push it closer to $3.50. All ingredients are standard stock at Harris Teeter, Food Lion, Publix, Walmart, and ALDI—no special trips required. The real caveat is that it's a same-night salad; greens wilt within hours of dressing, so this works best as a quick dinner rather than a make-ahead lunch.
