1 12-ounce package frozen popcorn shrimp
1/2 pound uncooked fettuccine pasta
2 cups fresh broccoli florets
4 ounces cream cheese, cut into pieces
1/4 cup grated Parmigiano-Reggiano cheese
3/4 cup milk
1/4 cup butter
1/4 teaspoon salt
Directions
Preheat your oven to 450°F.
Spread the frozen popcorn shrimp in a single layer on a baking sheet, making sure they do not overlap. Place on the middle oven rack and bake for 10 to 11 minutes, stirring halfway through cooking at the 5-minute mark. The shrimp should reach an internal temperature of 160°F.
While the shrimp bakes, bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package directions until al dente.
During the last 2 minutes of pasta cooking time, add the fresh broccoli florets to the pot with the pasta. Cook together until the broccoli is tender-crisp.
In a medium saucepan, melt the butter over low heat. Add the milk and cream cheese pieces, stirring constantly until the cream cheese is completely melted and incorporated. Stir in the grated Parmigiano-Reggiano cheese and salt until smooth and well combined.
Drain the pasta and broccoli and return them to the pot. Pour the warm Alfredo sauce over the pasta and vegetables, tossing gently to coat everything evenly. Add the cooked shrimp and stir carefully to distribute throughout. Divide among four serving plates and serve immediately.
