Ingredients
2 red apples (such as Cameo or Gala)
2 celery stalks, diced
2 cups cooked skinless chicken breast, diced
1/4 cup plain non-fat Greek yogurt
1/2 cup raisins
1/4 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon ground black pepper
16 lettuce leaves (Bibb, Romaine, green leaf, or red leaf)
Directions
Wash the red apples thoroughly under cool running water. Cut each apple into quarters, then carefully remove the core from each quarter. Chop the cored apple quarters into bite-sized pieces and set aside.
In a medium bowl, combine the chopped apples, diced celery, diced cooked chicken, Greek yogurt, raisins, mayonnaise, salt, and black pepper. Gently fold all ingredients together until well combined and evenly coated with the dressing. Taste and adjust seasonings if desired.
Arrange 4 lettuce leaves on each of 4 serving plates to create a bed. Divide the apple and chicken mixture evenly among the plates, spooning it over the lettuce. Serve immediately.
