Ingredients

1 tablespoon olive oil

1 medium leek, halved lengthwise and sliced

100g curly kale, chopped (tough stems removed)

3 cloves garlic, minced

100g cooked chickpeas

175ml single cream

30g cheddar cheese, grated

Salt to taste

Black pepper to taste

1 pinch Pinch of ground nutmeg

2 tablespoons fresh parsley, chopped

Directions

  1. Heat the olive oil in a large frying pan over medium heat. Add the sliced leek and chopped kale, stirring occasionally. Cook for approximately 5 minutes until both vegetables begin to soften and the kale wilts.

  2. Add the minced garlic to the pan and stir well. Continue cooking for 2-3 minutes, stirring frequently, until the garlic becomes fragrant.

  3. Stir in the cooked chickpeas and season generously with salt, black pepper, and nutmeg. Pour in the cream and sprinkle the grated cheddar cheese over the mixture.

  4. Reduce the heat slightly and simmer for approximately 2 minutes, stirring gently, until the cheese melts completely and the sauce thickens slightly. Taste and adjust seasoning as needed.

  5. Remove from heat and stir in the fresh chopped parsley. Serve warm as a side dish.
