Ingredients
1 cup water
2 cups sugar
1 cup fresh pineapple juice
½ cup fresh lime juice
8-10 fresh mint leaves
Ice cubes
½ cup sparkling water
Pineapple wedge and mint sprig for garnish
Directions
Combine the 1 cup water and 2 cups sugar in a saucepan over medium heat. Stir until the sugar completely dissolves, about 3-5 minutes. Remove from heat and let the simple syrup cool to room temperature, then refrigerate until chilled.
Place the fresh mint leaves in a tall glass and gently muddle them to release their oils and flavor, being careful not to tear the leaves.
Fill the glass with ice cubes.
Pour 3 tablespoons of the chilled simple syrup into the glass over the mint and ice.
Add the 1 cup fresh pineapple juice and ½ cup fresh lime juice to the glass and stir well to combine.
Top the drink with ½ cup sparkling water and stir gently.
