1/4 cup peeled and chopped yellow onion

1 small carrot, peeled and finely chopped

1 clove garlic, peeled and minced

4 ounces ground pork

1/4 teaspoon kosher salt

1/8 teaspoon freshly ground black pepper

1/4 teaspoon dried oregano

1 (14-ounce) can diced tomatoes, including juice

2 ounces elbow macaroni

1 1/2 teaspoons shredded Parmesan cheese

Directions

  1. Heat the olive oil in a medium skillet over medium-high heat. Once shimmering, add the chopped onion and carrot, and cook for 3 to 4 minutes, stirring occasionally, until the vegetables begin to soften.

  2. Add the minced garlic to the skillet and cook for about 30 seconds, stirring constantly, until fragrant.

  3. Crumble the ground pork into the skillet and cook, breaking it up with a spoon or wooden spatula, for 5 to 7 minutes until the pork is no longer pink and has reached an internal temperature of 160°F. Drain any excess fat if necessary.

  4. Season the cooked pork with kosher salt, ground black pepper, and dried oregano. Stir well to distribute the seasonings evenly.

  5. Pour the canned diced tomatoes with their juice into the skillet, stirring to combine with the pork mixture. Bring the sauce to a gentle simmer.

  6. Reduce the heat to medium-low and allow the ragù to simmer, uncovered, for 10 to 12 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.

  7. While the ragù simmers, cook the elbow macaroni separately according to the package instructions. Drain the cooked pasta, reserving a small amount of pasta water if desired to loosen the sauce.

  8. Transfer the cooked pasta to a serving bowl or plate, then spoon the pork ragù generously over the pasta. Top with the shredded Parmesan cheese and serve immediately.
