Tender grilled chicken breasts brushed with a light coat of olive oil and seasoned simply with salt and pepper, then finished with a vibrant mint, orange, and chile chutney. This Indian-inspired dish is protein-rich, quick to prepare, and pairs beautifully with the bright flavors of the homemade chutney.

Ingredients

4 whole skinless boneless chicken breast halves

2 tsp olive oil

salt

black pepper

mint, orange, and chile chutney for serving

Directions

  1. Preheat your grill to medium-high heat, positioning the rack 5 to 6 inches above the flame or coals.

  2. Pat the chicken breasts dry with paper towels to remove excess moisture. Lightly brush both sides of each breast with olive oil, then season generously with salt and black pepper.

  3. Place the chicken breasts on the hot grill. Cook for approximately 4 minutes on the first side without moving them, then flip and grill for another 4 minutes on the second side, until the internal temperature reaches 165°F when measured with a meat thermometer inserted into the thickest part.

  4. Transfer the cooked chicken to a cutting board, tent it loosely with foil, and allow it to rest for 5 minutes to retain juices.

  5. Lightly dip each chicken breast into the mint, orange, and chile chutney to coat, or serve with the chutney on the side for individual portions.

This is a quick weeknight winner if you already have the chutney on hand, but the 35-minute claim glosses over serious prep: making a proper mint-orange-chile chutney from scratch takes at least 20 minutes of chopping, blending, and adjusting seasonings, pushing total time closer to 55 minutes. Chicken and oil are free at any Charlotte grocer, but hunt down fresh mint (reliably at Harris Teeter and Publix, hit-or-miss elsewhere) and good chilies—you'll want Serranos or Thai birds, not just whatever pepper rack you find at Food Lion. The dish itself is bold and reheats well, making it solid for meal prep, and the ingredient list is mercifully short; the caveat is that the chutney is the whole story, so don't skimp on it or buy a shelf-stable substitute and expect fireworks.
