Ingredients
2 cup gluten-free rolled oats
¼ cup ground flax seed
1 tbsp chia seeds
½ cup pitted dates
¼ cup almond butter
¾ cup pumpkin puree
1 scoop vanilla protein powder
2½ tsp pumpkin pie spice
¼ cup water
⅓ cup dried cranberries (optional)
Directions
Add gluten-free oats, pitted dates, ground flax seed, chia seeds, almond butter, pumpkin puree, vanilla protein powder, and pumpkin pie spice to a food processor. Pulse the mixture several times until the dates are broken into small pieces and the overall texture becomes crumbly and begins to clump slightly.
Pour in the water and pulse again until the mixture becomes moist and sticky enough to hold together when squeezed. Add more water a teaspoon at a time if needed.
Fold in the dried cranberries by hand until evenly distributed throughout the mixture.
Using a 1-inch ice cream scoop or your hands, roll the mixture into sixteen small, compact balls. Place each finished ball on a parchment paper-lined baking sheet.
Cover the baking sheet with plastic wrap or transfer the balls to an airtight container. Refrigerate for at least 2 hours, or until the balls are firm and hold their shape.
Remove from the refrigerator and serve chilled. Store in an airtight container in the refrigerator for up to 2 weeks.
Comments
This recipe's 135-minute stated time is largely chill time, not active prep—you're looking at 15 minutes of hands-on work followed by 2 hours in the refrigerator, which is honest for a no-bake snack. Ingredient availability is strong across Charlotte chains; all items are standard pantry staples at Harris Teeter, Walmart, and ALDI, with no special trips needed. At roughly $0.65 to $0.75 per ball, the cost is reasonable for a protein-heavy snack, though the protein powder and specialty seeds bump the upfront basket size. These hold well for a week and make excellent grab-and-go breakfasts or post-workout bites, but they're a planned snack rather than a weeknight dinner solution.
