Ingredients

3 green onions, chopped finely

2 tomatoes, chopped finely

1 cup boiled sweet corn

1 onion, chopped finely

1 teaspoon sumac

pinch A pinch of salt

1 tablespoon olive oil

Nachos, for serving

Directions

  1. In a large bowl, combine the boiled sweet corn, finely chopped tomatoes, and chopped green onions.

  2. In a separate small bowl or on a clean cutting board, combine the finely chopped onion with the sumac and salt. Mix gently with your fingers or a spoon until the onion is lightly coated and takes on a subtle pink tint from the sumac.

  3. Transfer the sumac-coated onion mixture into the large bowl with the corn, tomatoes, and green onions.

  4. Stir all ingredients together until well combined and evenly distributed.
