Pink Lemonade Ice Cream Pie

Ingredients
2 cups Nilla wafers, crushed
2 tablespoons Butter, melted
1 packet (4.5 g) Crystal light pink lemonade powder
2 liters Vanilla ice cream, softened slightly
2 cups Whipped cream, divided
2 drops Red food coloring (optional, 1 to 2 drops)
1½ cups Shredded coconut for topping (optional, 1 to 2 cups)
Directions
Pulse the crushed nilla wafers in a food processor until they resemble fine, uniform breadcrumbs.
Add the melted butter to the processed wafer crumbs and pulse until the mixture is evenly moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate to form the crust. Set aside.
In a stand mixer, combine the softened vanilla ice cream, 1 cup of whipped cream (half of the total), and the crystal light pink lemonade powder. Whisk on high speed for 1 to 2 minutes until well blended and light.
If desired, add 1 to 2 drops of red food coloring to achieve a deeper pink shade, and whisk briefly to incorporate.
Pour the pink ice cream mixture into the prepared crust and smooth the top with a spatula until level.
Cover the pie and place in the freezer for at least 4 hours, or preferably overnight, until completely frozen solid.
To serve, remove the pie from the freezer 10 minutes before serving to soften slightly for easier slicing. Top each serving with a dollop of the remaining 1 cup of whipped cream.
Optional: Tint the shredded coconut pink by placing a small amount in a bowl, adding 1 drop of red food coloring, and mixing thoroughly. Gradually add more coconut and coloring until you reach the desired shade. Sprinkle the pink coconut over the top of each slice just before serving.
