Ingredients
1/4 cup lemon zest (from approximately 6 lemons)
1/4 cup lime zest (from approximately 8 limes)
20 makrut lime leaves
2 stalks fresh lemongrass, roughly chopped
2 cups water
3/4 cup Simple Syrup
6 cups soda water
ice cubes as needed
Directions
Combine lemon zest, lime zest, makrut lime leaves, and chopped lemongrass with 2 cups water in a small saucepan.
Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer gently for 5 minutes to infuse the flavors.
Strain the lemongrass mixture through a fine-mesh sieve into a clean jar, discarding the solids. Allow the infusion to cool to room temperature, then refrigerate until chilled.
For each spritzer, fill a 12-ounce glass with ice cubes.
Add 2 tablespoons of the chilled lemongrass infusion to the ice-filled glass.
Pour 1 tablespoon of simple syrup into the glass.
Top with approximately 1/2 cup of soda water.
Stir gently to combine all ingredients and distribute the flavors evenly throughout the drink.
Serve immediately and repeat steps 4-8 to prepare the remaining 11 spritzers.
