Cajun T-Bone Steaks

Ingredients
2 tbsp. garlic powder
2 tbsp. paprika
2 tbsp. kosher salt
2 tbsp. black pepper
1 tsp. cayenne pepper
3 T-bone steaks (1 to 1½ inches thick, 1 to 1½ pounds each)
Vegetable oil, for the grill
Directions
Whisk together the garlic powder, paprika, kosher salt, black pepper, and cayenne pepper in a small bowl until well combined. Arrange the T-bone steaks on a wire rack set over a baking sheet. Generously coat both sides of each steak with the spice mixture, using all of the blend. Allow the seasoned steaks to rest at room temperature for 30 minutes to 1 hour to develop flavor.
Heat your grill to medium-high heat. Lightly brush the grill grates with vegetable oil to prevent sticking. Carefully place the steaks on the grill and cover with the lid. Grill for approximately 6 minutes without moving, until deep caramelized grill marks appear on the bottom and the steaks release easily from the grates.
Using tongs, flip each steak and continue grilling for 5 to 7 minutes longer. Check the internal temperature by inserting a meat thermometer into the thickest part of the steak, away from the bone. Cook to an internal temperature of 145°F for medium-rare doneness.
Transfer the steaks to a clean cutting board and let them rest undisturbed for 10 minutes. This allows the juices to redistribute throughout the meat. Slice and serve immediately.
