Ingredients

2 lb Medium shrimp, peeled and deveined

1½ tbsp Hot mustard powder

1 tsp Fresh lemon juice

1 c Canola oil

1 tbsp Water

Directions

  1. Fill a large pot with salted water and bring to a rolling boil over high heat. Once boiling, carefully add the shrimp and stir gently to prevent sticking.

  2. Cook the shrimp for 2 to 3 minutes, until they turn pink and opaque throughout. Do not overcook. Drain immediately in a colander and transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and pat dry.

  3. In a mixing bowl, whisk together the hot mustard powder, water, and fresh lemon juice until well combined and smooth, breaking up any lumps in the mustard powder.

  4. Slowly drizzle in the canola oil while whisking constantly. Continue whisking until the mixture emulsifies into a thick, creamy mayonnaise with a vibrant spicy flavor.

  5. Arrange the cooled shrimp on a serving platter and serve alongside the spicy mayonnaise for dipping.
