½ cup sparkling water

Directions

  1. In a 4-cup measuring pitcher or small bowl, combine the fresh lime juice and raw honey. Whisk vigorously for about one minute until the honey is fully dissolved and the mixture is well blended.

  2. Pour the coconut milk into the lime and honey mixture. Add the silver rum and finely chopped fresh mint. Whisk all ingredients together until fully combined and evenly distributed.

  3. Gently stir in the sparkling water until just incorporated—do not overmix as this may reduce the carbonation. Carefully divide the mixture among 6 popsicle molds, filling each about three-quarters full. Insert the popsicle sticks into the center of each mold.

  4. Place the filled molds in the freezer. Freeze for at least 8 hours or overnight until completely solid. Once frozen solid, run warm water briefly over the outside of the mold to ease removal, then push the popsicles out from the bottom.
