Ingredients
3 cups potatoes, cut into 1-inch cubes
½ cup onion, chopped into 1-inch pieces
½ cup green bell pepper, chopped into 1-inch pieces
1 teaspoon garlic, minced
1 teaspoon vegetable oil
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh parsley, finely chopped (optional)
½ teaspoon paprika (optional)
Directions
In a medium bowl, combine the diced potatoes, chopped onion, green pepper pieces, and minced garlic.
Drizzle the vegetable oil over the potato mixture, then sprinkle with salt and black pepper.
If using parsley and paprika, add them to the bowl now.
Toss all ingredients together until the vegetables are evenly coated with oil and seasonings.
Cover the bowl and refrigerate for 15 minutes.
Preheat your oven to 350°F. Spread the potato mixture in a single layer on a baking sheet.
Bake for 35 minutes, or until the potatoes are tender and the edges are golden brown.
Remove from oven and serve hot as a side dish.
Comments
Every ingredient is a standard find at any Charlotte grocer—potatoes, onions, peppers, garlic, and pantry staples like oil and paprika are plentiful at Harris Teeter, Food Lion, and Walmart. The cost per serving is minimal, probably under $1.50 per person depending on potato quality, since this is fundamentally just root vegetables and oil. The 50-minute time is honest for roasting, though it assumes the potatoes are cut to medium size and preheated oven time is already factored in; smaller cuts or a convection oven could shave ten minutes. It's a straightforward side dish that reheats well and feeds a family of six without fussiness, though it does require occasional stirring during roasting and isn't a set-and-forget formula.
