Easy Strawberry and Lime Freezer Jam

Ingredients
2 cups fresh strawberries, hulled and smashed
4 cups granulated sugar
1½ tsp fresh lime zest
¾ cup water
1¾ oz powdered pectin
Directions
In a large bowl, combine the smashed strawberries, granulated sugar, and lime zest. Stir well to combine and let the mixture sit on the counter for 10 minutes to allow the juices to release.
In a small saucepan, whisk together the water and powdered pectin until no lumps remain. Place the saucepan over medium heat and bring the mixture to a rolling boil, stirring frequently to prevent lumps from forming.
Once boiling, allow the pectin mixture to simmer for 2 to 3 minutes while stirring constantly.
Carefully pour the hot pectin mixture into the strawberry mixture and stir well until fully combined and smooth. Let the mixture rest for 1 to 2 minutes.
Divide the jam evenly among 8-ounce freezer-safe jars, filling each jar to within about 1/2 inch of the rim to allow for expansion during freezing.
Place the filled jars on a flat countertop and leave undisturbed for 24 hours to allow the jam to set properly at room temperature.
After 24 hours, transfer the jars to the freezer where they will keep for up to 1 year. Thaw in the refrigerator overnight before opening and serving.
