Ingredients

1 tbsp Vegetable oil

¼ cup Red curry paste, jarred

14½ oz Coconut milk

½ cup Creamy peanut butter

3 tbsp Unseasoned rice vinegar

1 tbsp Fish sauce

1 tbsp Honey

Kosher salt, to taste

Directions

  1. Pour the vegetable oil into a medium saucepan and set the heat to medium. Once the oil is warm, add the red curry paste and cook it for 2 to 3 minutes, stirring frequently. The paste is ready when it becomes very fragrant and begins to stick slightly to the bottom of the pan.

  2. Pour in the coconut milk and whisk until well combined. Bring the mixture to a gentle simmer and continue cooking for about 3 minutes, whisking occasionally, until the color deepens and the liquid reduces slightly.

  3. Remove the saucepan from the heat. Whisk in the peanut butter, rice vinegar, fish sauce, and honey until the mixture is smooth and fully blended. Season generously with kosher salt to your taste, keeping in mind the dip will be served with mild accompaniments.

  4. Allow the dip to cool to room temperature. Transfer it to an airtight container and refrigerate until chilled before serving. The dip will keep refrigerated for up to 4 days.

This dip is genuinely quick—the stated 25 minutes is honest, since you're mostly stirring together pantry items with no chopping or cooking. Fish sauce and red curry paste require a special stop at ALDI or Kroger's International section, though both keep for months, so the overhead is one-time. At roughly $1.25 per serving, it's budget-friendly, especially since peanut butter and coconut milk anchor the cost in North Carolina where peanuts are a local staple. The dip will hold its flavor and texture for days in the refrigerator, making it excellent for meal prep or entertaining.
