2 boneless, skinless chicken breasts (about 6 oz each)
3 ounces Danish blue cheese, crumbled
2 tablespoons fresh cream or sour cream
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
¼ cup unsalted butter, melted
Salt and black pepper to taste
Directions
Preheat your grill to medium-high heat (about 400°F). Pat the chicken breasts dry and place them on a cutting board.
Using a sharp knife, carefully slice a horizontal pocket into each chicken breast, being careful not to cut all the way through. The pocket should extend about three-quarters of the way across but remain closed on three sides.
In a small bowl, combine the crumbled Danish blue cheese with the fresh cream, stirring until well blended. Divide the mixture evenly and carefully stuff each chicken breast pocket with the blue cheese mixture.
Season both sides of the stuffed chicken breasts generously with salt and black pepper.
Place the chicken breasts on the preheated grill and cook for 9–11 minutes per side, until the internal temperature reaches 165°F when measured with a meat thermometer in the thickest part. Avoid moving the chicken frequently to develop nice grill marks.
While the chicken cooks, whisk together the melted butter, fresh lemon juice, and lemon zest in a small bowl. Set the lemon butter sauce aside.
Transfer the grilled chicken to serving plates and drizzle generously with the warm lemon butter sauce. Serve immediately.
