Ingredients

2 tbsp peanut oil

1¼ lb pork filets

10 oz fresh asparagus, cut into 2-inch pieces

½ cup plum sauce

2 tbsp light soy sauce

Directions

  1. Cut the pork filets into thin, bite-sized slices, about 1/4 inch thick.

  2. In a small bowl, combine the plum sauce and light soy sauce, stirring until well blended.

  3. Heat the peanut oil in a large skillet or wok over high heat until shimmering, about 1 minute.

  4. Add the pork slices to the hot skillet and cook, stirring frequently, until they reach an internal temperature of 145°F and are no longer pink, approximately 5-6 minutes. Transfer the cooked pork to a plate.

  5. Add the asparagus pieces to the same skillet and stir-fry over high heat until they are tender-crisp with light browning, about 4-5 minutes.

  6. Return the pork to the skillet with the asparagus. Pour in the plum sauce mixture and stir constantly to coat all ingredients evenly.

  7. Bring the mixture to a gentle simmer and cook for about 2-3 minutes, stirring occasionally, until the sauce thickens slightly and coats the pork and vegetables.

  8. Serve immediately while hot over rice or your preferred starch.
