Ingredients

1 cup vegetable oil

kosher salt

2 cups scallions, sliced

2 inch knob fresh ginger, grated

Directions

  1. Heat the vegetable oil in a small saucepan over medium heat until it is very hot and shimmering, about 3-4 minutes. Do not allow it to smoke.

  2. Place the grated ginger and sliced scallions in a heatproof bowl and add a generous pinch of kosher salt to taste.

  3. Carefully pour the hot oil over the ginger and scallions, stirring gently to combine. The heat will soften and infuse the aromatics into the oil.

  4. Allow the mixture to cool to room temperature before serving. Stir once more and adjust seasoning with additional salt if needed. Transfer to a jar or serving vessel and enjoy with your favorite dishes.
