Ingredients

½ yellow onion, diced

½ red or yellow bell pepper, diced

1 small zucchini, diced

2 cloves garlic, minced

½ lb Spanish chorizo sausage or Portuguese linguica, sliced into rounds

4 to 5 tablespoons extra-virgin Spanish olive oil

3 sprigs fresh thyme

4 cups water

2 cans (15 oz each) white beans, drained and rinsed

Salt to taste

Black pepper to taste

Directions

  1. Heat the olive oil in a large, deep skillet over medium heat. Add the minced garlic and cook, stirring frequently, until fragrant and just beginning to soften, about 1 to 2 minutes. Do not let the garlic brown.

  2. Add the diced onion and bell pepper to the skillet. Sauté, stirring occasionally, until the vegetables begin to soften, about 4 to 5 minutes.

  3. Add the chorizo slices to the skillet and cook, stirring occasionally, until the sausage is lightly browned and has released some of its oils, about 5 to 7 minutes.

  4. Add the diced zucchini and fresh thyme sprigs to the skillet, stirring to combine all ingredients. Season lightly with salt and black pepper.

  5. Pour in the water and bring the mixture to a simmer over medium-high heat. Once simmering, reduce heat to medium-low and cook, uncovered, for about 10 minutes to allow the flavors to meld.

  6. Add the drained white beans to the stew, stirring gently to incorporate them throughout. Continue to simmer over medium-low heat for another 10 to 12 minutes, until the beans are heated through and the broth has developed deeper flavors.

  7. Remove the thyme sprigs from the stew. Taste the stew and adjust the seasoning with additional salt and black pepper as needed. Ladle the stew into serving bowls and enjoy while hot.
