Ingredients
1/2 cup mayonnaise
1 clove garlic, minced
1/4 teaspoon black pepper
8 slices rye bread
1 pound thick-sliced bacon, cooked
2 avocados, sliced
1 cup fresh arugula
1/4 cup chopped sundried tomatoes
Directions
In a small bowl, combine the minced garlic, black pepper, and mayonnaise. Mix until the garlic and pepper are evenly distributed throughout the mayonnaise.
Spread approximately 1 tablespoon of the garlic mayonnaise mixture on one side of each of the 8 bread slices.
Assemble the sandwiches by layering arugula, bacon, avocado slices, and chopped sundried tomatoes between the bread slices.
Cut each sandwich diagonally if desired and serve immediately.
