Ingredients

1½ cups unbleached all-purpose flour

¾ cup sugar (for crust)

Pinch of salt (for crust)

1½ sticks cold unsalted butter (3 oz.), cut into cubes

2 large eggs

¼ cup all-purpose flour (for filling)

¼ cup sugar (for filling)

½ cup sour cream

Pinch of salt (for filling)

2 cups fresh peaches, finely diced

1 cup powdered sugar

5 tablespoons heavy whipping cream

1 teaspoon almond extract

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  2. In a large bowl, whisk together 1½ cups flour, ¾ cup sugar, and a pinch of salt for the crust.

  3. Add the cold butter cubes to the flour mixture and use a pastry blender or two knives to cut the butter into the flour until the mixture resembles coarse crumbs and the butter is evenly distributed.

  4. Reserve 1 cup of the crumb mixture and set aside. Press the remaining crumbs firmly into the bottom of the prepared baking dish to form an even crust layer.

  5. Bake the crust layer for 10-12 minutes until it begins to firm up, then remove from the oven.

  6. While the crust bakes, prepare the filling by whisking together the 2 eggs, ¼ cup flour, ¼ cup sugar, sour cream, and a pinch of salt in a separate bowl until smooth and well combined.

  7. Gently fold the diced peaches into the egg mixture, being careful not to overmix.

  8. Pour the peach filling evenly over the warm crust layer.

  9. Sprinkle the reserved 1 cup of crumb mixture over the top of the peach filling, distributing it evenly.

  10. Bake the bars for 40-45 minutes until the crumbs are golden brown and a toothpick inserted into the filling comes out clean.

  11. Remove from the oven and let cool for 15 minutes before preparing the drizzle.

  12. While the bars cool, prepare the almond drizzle by whisking together the powdered sugar, heavy whipping cream, and almond extract until smooth and pourable.

  13. After the bars have cooled for 15 minutes, drizzle the almond icing over the top using a fork or whisk, creating a decorative pattern.

  14. Allow the bars to cool completely before cutting into 24 squares and serving.
