Ingredients
2 cups watermelon chunks, cubed
1 tablespoon agave nectar
½ cup white wine per serving (such as Pinot Grigio)
½ cup club soda per serving
Directions
Add the watermelon chunks and agave nectar to a food processor or blender. Pulse until the mixture reaches a smooth consistency. If you prefer a clearer juice, strain the mixture through cheesecloth into a bowl, pressing gently to extract the liquid.
Divide the watermelon puree evenly among four glasses, pouring approximately ¼ cup into each glass.
Top each glass with ½ cup white wine, pouring slowly to allow the layers to blend slightly.
Complete each spritzer by topping with ½ cup club soda. Stir gently to combine and serve immediately.
Comments
Every ingredient is stocked at any Charlotte grocer—watermelon is a summer staple in NC, white wine and club soda are everywhere, and agave nectar sits in the baking aisle of Harris Teeter, Food Lion, and Walmart. At roughly $8–10 for watermelon, $12 for a decent white wine, and negligible costs for agave and soda, you're looking at $1.25–1.50 per serving, making this genuinely cheap for a refreshing cocktail. The five-minute stated time is honest; there's no trick—you cube melon, add agave, wine, and soda. The main drawback is that it's a same-night drink; leftovers don't reheat well once carbonation flattens, so you need to serve it immediately to guests.
