Ingredients

½ pounds Australian beef tenderloin

olive oil

salt

freshly ground black pepper

1 frozen pizza dough base

1½ cups fresh arugula

3 ounces shaved Parmesan cheese

¼ cups olive oil for mint oil

6 fresh mint leaves

Directions

  1. Prepare the mint oil by placing 6 fresh mint leaves and ¼ cup olive oil in a small blender or food processor. Blend until the mint is finely chopped and infused throughout the oil. Set aside.

  2. Remove the frozen pizza dough base from the freezer and place it on a pizza pan or baking sheet. Follow package instructions to bake the dough until it begins to crisp, typically at 400–425°F for about 8 minutes.

  3. While the dough bakes, pat the ½ pound Australian beef tenderloin dry with paper towels. Season generously on both sides with salt and freshly ground black pepper.

  4. Heat about 1 tablespoon of olive oil in a hot skillet over high heat. Sear the beef tenderloin for about 2 minutes per side for medium-rare, until the internal temperature reaches 145°F. Transfer to a cutting board and let rest for 1–2 minutes, then slice thinly.

  5. When the pizza dough has partially baked and is firm, remove it from the oven. Top with the sliced beef tenderloin, spreading it evenly across the surface.

  6. Return the pizza to the oven and bake for an additional 2 minutes to warm the beef through and finish crisping the crust.

  7. Remove the pizza from the oven and immediately top with fresh arugula and shaved Parmesan cheese.

  8. Drizzle the mint oil generously over the top. Slice and serve immediately while the pizza is warm and the greens are fresh and crisp.
