Ingredients
1 lb Large shelled and deveined shrimp
1 bag Mixed baby greens
3 cup Seedless watermelon, diced into 1 1/2-inch chunks
2 oz Crumbled feta cheese
4 tbsp Prepared lemon and chive dressing
Directions
Heat a large skillet over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes per side until they turn opaque and reach an internal temperature of 145°F. Remove from heat and let cool for a minute.
Divide the mixed baby greens among four serving bowls or plates.
Top each bed of greens with the cooled shrimp, diced watermelon, and crumbled feta cheese.
Drizzle each salad with 1 tablespoon of the prepared lemon and chive dressing and toss gently to combine. Serve immediately.
Comments
Shrimp and fresh watermelon are both at their peak in Charlotte summers, and feta with lemon-chive dressing is a clean, no-fuss combination that tastes expensive for what you spend. The 20-minute claim is honest if you buy pre-cooked shrimp from Harris Teeter, Food Lion, Publix, or Walmart; frozen shrimp will cost less but adds 10 minutes of thawing. At roughly $8–10 per serving for four, it skews slightly upmarket but is genuinely cheaper than the restaurant version, and it reheats poorly, so plan to eat it fresh the same night.
