Ingredients
1 teaspoon olive oil
¼ red bell pepper, diced
¼ yellow bell pepper, diced
½ yellow onion, diced
1 eggs
6 egg whites
salt
black pepper
cayenne pepper
Directions
Heat the olive oil in a non-stick skillet over medium heat.
Add the diced red pepper, yellow pepper, and onion to the skillet. Sauté for 3-4 minutes, stirring occasionally, until the vegetables are softened and lightly golden.
In a bowl, whisk together the whole egg and egg whites until well combined. Season the mixture with salt, black pepper, and cayenne pepper to taste.
Pour the egg mixture into the skillet with the sautéed vegetables. Gently stir and scramble for 4-5 minutes until the eggs reach an internal temperature of 160°F and are fully cooked through, with no runny portions remaining.
Transfer to a plate and serve immediately.
Comments
This scramble hits all the weeknight marks: every ingredient is stocked at any Charlotte chain store, the cost runs about $1.50-$2.00 per serving (eggs and peppers are cheap year-round here), and 15 minutes is honest time for a single person to chop and cook. The real limitation is that it's a one-serving recipe that doesn't reheat well—if you're cooking for a family, you're making this five times in a row, and the per-serving economics suffer with oil and seasoning waste on small batches. It's reliable and affordable for a solo breakfast but rigid for household flexibility.
