Ingredients

8 slices bread

2 tablespoons softened butter

1 cup store-bought kimchi, drained

1 green apple or Asian pear, cored and thinly sliced

1 cup shredded cheddar cheese

Directions

  1. Preheat a large skillet over medium-high heat for 2 minutes until it is hot and ready for cooking.

  2. Working with two slices of bread at a time, spread approximately 1/2 tablespoon of softened butter evenly across both sides of each slice.

  3. On one buttered slice, layer one quarter of the drained kimchi, followed by a quarter of the thinly sliced apple or pear, and then a quarter of the shredded cheddar cheese. Top with the second buttered slice, butter-side up.

  4. Place the assembled sandwich into the hot skillet. Using a spatula, press down gently on the sandwich and cook for 3-4 minutes until the bottom is golden brown and crispy and the cheese begins to melt.

  5. Carefully flip the sandwich and cook the other side for another 3-4 minutes, pressing occasionally with the spatula, until it is golden brown and the cheese is fully melted.

  6. Transfer the sandwich to a plate and repeat steps 2-5 with the remaining bread, butter, kimchi, apple or pear, and cheese to make 3 more sandwiches.

  7. Serve immediately while warm and cheese is melted.
