Cajun Beans and Greens with Sausage

Ingredients
2 tablespoons vegetable oil
14 ounces andouille or pepper sausage, sliced into rounds
1 clove garlic, minced
1 medium zucchini, quartered and sliced
4 cups coarsely chopped mustard or collard greens
1 can red kidney beans, rinsed and drained
1 tablespoon beef bouillon
1 tablespoon soy sauce
Cajun seasoning, to taste
Salt and black pepper, to taste
2 cups cooked brown rice
Directions
Heat the vegetable oil in a large skillet or pot over medium-high heat.
Add the sliced sausage and cook for 5-7 minutes, stirring occasionally, until the sausage is browned and cooked through.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the sliced zucchini and cook for 3-4 minutes, stirring occasionally, until it begins to soften.
Add the chopped greens, kidney beans, beef bouillon, and soy sauce to the skillet.
Season generously with Cajun seasoning, salt, and black pepper to taste.
Stir well to combine all ingredients and cook for 8-10 minutes over medium heat, stirring occasionally, until the greens are tender and the flavors have melded together.
Serve the Cajun beans and greens mixture over the cooked brown rice.
