Ingredients

2 bananas, cut into 1½ to 2 inch chunks

½ tablespoon melted coconut oil

½ cup dairy-free dark chocolate chips

1 tablespoon cashew, peanut, or sunflower seed butter

Sweetener, to taste (such as agave nectar, maple syrup, or sugar)

Directions

  1. Insert wooden sticks or straws into the banana chunks, positioning them so that each piece is secure and ready for dipping. Arrange the skewered banana pieces in a single layer on a silicone mat or parchment paper, ensuring they do not touch each other.

  2. Place the prepared banana pops in the freezer and freeze for several hours until completely solid. Once frozen, they can be stored in an airtight container or freezer bag until ready to use.

  3. Melt the dark chocolate chips using either the microwave (about 1 minute, stirring halfway through) or a double boiler over gentle heat. Do not allow the chocolate to overheat—it should be just melted and smooth.

  4. Add the melted coconut oil, nut or seed butter, and sweetener to the melted chocolate. Stir until the mixture is completely smooth and well combined.

  5. Working quickly, remove a few frozen banana pops from the freezer at a time. Dip each pop into the chocolate mixture, rotating it gently to coat all sides evenly. If desired, immediately roll in optional toppings while the chocolate is still wet.

  6. Return the dipped pops to the freezer on the silicone mat or parchment paper. If the chocolate coating becomes too thick while dipping, briefly warm it in the microwave for 15 seconds and stir to restore its consistency. Serve immediately or keep frozen until ready to enjoy.
