Ingredients

8 ounces Firm tofu, cut into four 1/2-inch slices

3 tablespoons Thai red curry paste

3 tablespoons Sugar

2 tablespoons Fish sauce

½ pound Green beans, trimmed

½ cup Vegetable broth

1 tablespoon Peanut oil

Directions

  1. Pat the tofu slices dry with paper towels to remove excess moisture. This helps achieve better browning and allows the tofu to absorb the curry sauce more effectively.

  2. In a small bowl, whisk together the Thai red curry paste, sugar, fish sauce, and vegetable broth until smooth. Set the curry sauce aside.

  3. Heat the peanut oil in a large skillet over medium-high heat. Once hot, carefully place the tofu slices in the skillet in a single layer.

  4. Pan-fry the tofu for 4-5 minutes per side until lightly golden and crispy at the edges. Transfer the tofu to a plate and set aside.

  5. In the same skillet, add the trimmed green beans. Stir and cook for 3-4 minutes until they begin to soften slightly.

  6. Pour the curry sauce mixture over the green beans and stir to combine. Bring to a gentle simmer.

  7. Return the pan-fried tofu slices to the skillet, nestling them among the green beans. Reduce heat to medium-low and simmer gently for 30-40 minutes, allowing the flavors to meld and the sauce to thicken slightly. Stir occasionally and be gentle with the tofu to keep the slices intact.

  8. Divide the tofu and green beans between two plates and spoon the aromatic curry sauce over the top. Serve warm.
