1 large egg
1 cup skim milk
1/3 cup vegetable oil
1 1/4 cups all-purpose flour
1 cup rolled oats
1/3 cup granulated sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 cup raisins
1 teaspoon butter, for greasing
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Preheat your oven to 400°F. Position the racks so you have space for your muffin pans.
In a small mixing bowl, combine the egg, skim milk, and vegetable oil. Stir gently until well blended.
In a large mixing bowl, combine the all-purpose flour, rolled oats, sugar, baking powder, salt, and raisins. Mix until the dry ingredients are evenly distributed.
Pour the egg and milk mixture into the large bowl with the dry ingredients.
Stir gently with a spatula or wooden spoon just until the dry ingredients are barely moistened. The batter should appear lumpy and rough—do not overmix, as this can result in dense muffins.
Lightly grease each cup in your muffin pans with a small amount of butter.
Divide the batter evenly among the muffin cups, filling each cup about halfway full.
Bake for 20 to 25 minutes, until the muffin tops are golden brown. A toothpick inserted into the center of a muffin should come out clean or with just a few moist crumbs.
Remove the muffins from the oven and cool in the pan for a few minutes before turning out onto a wire rack.
