4 large bone-in chicken thighs, with skin (about 2 pounds)
2 teaspoons Pure chile powder
Salt
Freshly ground black pepper
Directions
Preheat your grill to medium-high heat.
Pat the chicken thighs dry with paper towels to remove excess moisture, which helps achieve better browning and crispier skin.
In a small bowl, combine the chile powder with a generous pinch of salt and freshly ground black pepper.
Rub the chile powder mixture evenly over all sides of each chicken thigh, ensuring the seasoning is distributed across both the skin and the flesh.
Place the seasoned chicken thighs skin-side down on the preheated grill. Cook for 12 to 14 minutes, until the skin is golden brown and crispy.
Flip the chicken thighs and continue grilling for another 10 to 12 minutes, until the internal temperature reaches 165°F when measured with a meat thermometer inserted into the thickest part of the thigh without touching bone.
