Pomegranate Mojito Mocktail

Ingredients
3 tbsp pomegranate seeds
large bunch fresh mint
2 limes
1 l pomegranate juice
500 ml lemonade
water
Directions
Prepare the pomegranate seed ice cubes one day ahead. Distribute the pomegranate seeds evenly among the compartments of an ice cube tray, then fill each compartment with water until nearly full. Place the tray in the freezer and freeze completely overnight until solid.
When ready to serve, set aside half of the mint bunch for garnish. Tear the remaining mint into bite-sized pieces and place in a large jug. Quarter the two limes and add to the jug.
Using a rolling pin or the back of a wooden spoon, gently crush and muddle the mint and lime quarters together for about one minute to release their essential oils and flavors. Be careful not to pulverize the mint, as this can make it bitter.
Pour the pomegranate juice and lemonade into the jug with the muddled mint and lime. Stir well to combine all the flavors.
Place 2 to 3 pomegranate seed ice cubes in each serving glass. Carefully strain the pomegranate mixture through a fine-mesh sieve into the glasses, leaving the mint and lime solids behind.
Garnish each glass with a slice of fresh lime and a sprig of reserved mint. Serve immediately and enjoy.
