3 tablespoons unsalted butter

1/2 cup finely chopped red bell pepper

1 cup finely chopped white onion

2 15-ounce cans whole kernel sweet corn, drained

8 strips bacon, cooked and crumbled

3 tablespoons pure maple syrup

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 cup fresh chopped parsley

Directions

  1. Melt the butter in a large skillet over medium heat.

  2. Add the chopped red bell pepper and onion to the skillet. Cook and stir frequently until the vegetables are softened and the onions become translucent, about 5 minutes.

  3. Stir in the drained corn, crumbled bacon, maple syrup, salt, pepper, and fresh parsley. Mix well to combine all ingredients.

  4. Cook for 5 minutes over medium heat, stirring occasionally. Then reduce the heat to low and simmer until ready to serve, keeping the mixture warm.
