Ingredients
1 (20 ounce) package cheese tortellini
1 tablespoon olive oil
1 ½ teaspoons smoked paprika
¼ teaspoon crushed red pepper
1 cup halved grape tomatoes
Fresh Parmesan cheese, shaved or grated
Directions
Bring a large pot of salted water to a rolling boil. Add the cheese tortellini and cook according to package directions until just tender, approximately 5 minutes. Drain well and set aside.
In a large skillet, warm the olive oil over medium heat. Stir in the smoked paprika and crushed red pepper, allowing the spices to bloom in the hot oil for about 30 seconds until fragrant.
Add the drained tortellini to the skillet and toss gently to coat evenly with the spiced oil. Continue to sauté for 5 to 6 minutes, stirring occasionally, until the pasta develops light golden-brown spots and is well-coated with the seasoning.
Add the halved grape tomatoes to the skillet and stir gently to combine. Heat through for approximately 2 minutes, until the tomatoes are warmed but still retain their shape.
Divide the spicy tortellini among serving bowls and top generously with freshly shaved or grated Parmesan cheese. Serve immediately while hot.
Comments
Every ingredient is stocked at any Harris Teeter, Food Lion, or Walmart in Charlotte, making this genuinely convenient for a weeknight. The cost per serving runs roughly $2.50–$3.00 depending on tortellini brand and whether you buy bulk paprika, which is solid for a dinner. The stated 20 minutes is honest if you skip the fresh herbs and plating fuss, though boiling water and cooking tortellini will eat 12–15 minutes alone, leaving little margin for browning tomatoes. This reheats well in a skillet with a splash of water, and it's forgiving enough for families, but it's essentially a pantry-rescue dish—good, not memorable, and it won't justify a second market trip.
