1/2 cup margarine, softened

1/2 cup white sugar

2 eggs

2 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 1/2 cups mashed ripe bananas

1 cup fresh plums, pitted and chopped

Directions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with margarine or cooking spray, ensuring all surfaces are coated to prevent sticking.

  2. In a large mixing bowl, combine the softened margarine and white sugar. Beat them together with an electric mixer on medium speed until the mixture is light, fluffy, and creamy, approximately 2-3 minutes.

  3. Add the two eggs to the margarine-sugar mixture, one at a time, beating well after each addition until fully incorporated.

  4. In a separate bowl, sift together the all-purpose flour, baking powder, and baking soda. This ensures even distribution of the leavening agents and removes any lumps.

  5. Add the flour mixture to the egg mixture in three equal parts, alternating with the mashed bananas. Begin and end with the flour mixture. After each addition, stir gently with a spatula until just combined, being careful not to overmix. Continue until the batter is smooth and well blended.

  6. Gently fold the chopped plums into the batter using a rubber spatula, distributing them evenly throughout without crushing them.

  7. Pour the batter into the prepared 9x13-inch baking dish, spreading it evenly with a spatula to ensure uniform cooking.

  8. Bake in the preheated oven for 55-60 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs. The top should be golden brown.

  9. Remove the bread from the oven and allow it to cool in the baking dish for 10 minutes before turning out onto a wire rack to cool completely.
