Ingredients

2 medium-large peaches, peeled and diced

1/3 cup granulated sugar

1/2 cup cold water

1 cup fresh or frozen raspberries

2 tablespoons granulated sugar

1/4 cup cold water

6 glasses champagne, chilled

Directions

  1. Peel and dice the peaches. Place the diced peaches, 1/3 cup sugar, and 1/2 cup cold water in a blender. Puree until completely smooth.

  2. Divide the peach puree in half. Pour the first half evenly among 6 popsicle molds, filling each mold about one-third of the way. Gently push 3–4 fresh or frozen raspberries into each portion of puree. Place the molds in the freezer for 40 minutes. Keep the remaining peach puree in the refrigerator.

  3. After 40 minutes, insert popsicle sticks into the center of each partially frozen popsicle.

  4. Combine the remaining raspberries (about 3/4 cup), 2 tablespoons sugar, and 1/4 cup cold water in the blender. Puree until smooth. Pour this raspberry mixture evenly over the popsicle sticks into each mold. Return to the freezer for 40 minutes.

  5. Remove the molds from the freezer and pour the reserved peach puree to fill each mold to the top. Gently insert 3–4 more raspberries into each popsicle. Return the molds to the freezer and freeze completely for 1 hour.

  6. To remove the popsicles, run the molds under warm water for 1–2 minutes, then gently pull up on each popsicle stick until it releases.

  7. Pour chilled champagne into 6 champagne glasses. Carefully invert each frozen popsicle into a champagne glass so the popsicle floats in the bubbly.

  8. Serve immediately while the popsicles are still frozen.
